    Zesty Chickpea Spread

  1 15-oz can of chickpeas, drained (rinsed if nonorganic; reserve liquid if organic)
  3 Tb chickpea liquid (from drained can)
  1 Tb roasted garlic olive oil
  1 tsp Italian Herb Blend (see recipe below or buy store brand)

  ½ tsp salt, or to taste
  5 tsp balsamic vinegar, or to taste

  Combine all ingredients in mini-food processor and process until smooth. Add seasonings to taste.

  Italian Herb Blend

  1 Tb dried oregano
  1 Tb dried basil
  2 tsp dried thyme
  2 tsp dried rosemary
  1½ tsp fennel seeds
  1 tsp crushed red pepper flakes

  Combine ingredients in a tightly closed jar. Shake well and store in a dark, cool place for up to 3 months.
