   Tofu Salad (Eggless Salad)

   1 block of firm tofu
   1 chopped small red onion
   4 cloves crushed garlic
   1 tsp herb seasoning
   1 tsp dried parsley
   1 avocado chopped into small chunks
   1 tsp tamari or raw soy sauce
   3 Tb eggless mayonnaise

   Press tofu between paper towels to drain excess water. Place tofu in large bowl and mash with fork. Add

    onions, garlic, herbs, and sauce. Fold in eggless mayonnaise and avocado chunks. Serves 4.
