Spicy Greens

   1 bunch collards
   1 small chopped red onion
   1 clove chopped garlic
   1 small chopped hot pepper
   2 Tb olive oil

  Slice collards across into thin sections. Heat olive oil at medium temperature in pan or wok. Add all    

   ingredients except hot pepper. Sauté up to 10 minutes. Stir often and well. Place greens in serving bowl and

  sprinkle hot pepper on top. Serves 2.
