Shish-Kabob

Marinade

1¼ cups extra virgin olive oil
½ cup vinegar
2 cloves crushed garlic
Basil and oregano to taste

Vegetables

1 pint cherry tomatoes
24 mushrooms, cleaned and halved
2 sweet peppers, cut into wide strips
2 medium onions, cut into 1-inch chunks

Place all vegetables into prepared marinade. Let soak for at least 3 hours. Creatively place marinated vegetables onto skewers. Eat as is. Serves 6.
