Soy

  Scrambled Tofu

1 pound of firm tofu
1 Tb olive oil
½ cup chopped onion
1 clove minced garlic
½ cup chopped green pepper
½ cup sliced mushrooms
1 Tb liquid aminos
1 tsp dried vegetable seasoning
1 tsp basil

Sauté onion, garlic, pepper and mushrooms in oil. Press water out of tofu using paper towels, then crumble tofu. Add crumbled tofu, liquid aminos and seasonings to other ingredients in pan and sauté until tofu starts to turn brown. Serves 4.
