  Mama’s Mock “Meatloaf”

  Loaf


  1 medium diced onion

  ½ diced green pepper
  3 Tb olive oil
  2 packages mock “ground meat” or textured vegetable protein (TVP)

  ¼ cup dry oatmeal
  2 slices crumbled whole grain bread
  3 Tb all-natural ketchup
  2 tsp garlic salt
  1 tsp pepper

  Coating

  4 tsp all-natural ketchup
  2 tsp maple syrup

  ½ tsp dry mustard

  ½ tsp nutmeg

  Sauté the onion and green pepper in the oil over medium heat until soft. Combine onion and green            

   pepper in a bowl with the mock “ground meat” or TVP, oatmeal, bread, ketchup, garlic salt and pepper.    

   Thoroughly mix with a spoon or your hands. Press the mixture into an oiled loaf pan. Cover with foil and

   bake at 375 degrees for 30 minutes. Mix together the ingredients for coating and set aside. When loaf is

   ready, remove from oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Bake,

   uncovered, for another 15 minutes. Serves 6. (Adapted from recipe by Russell Simmons in PETA’s Animal Times.)
