Soul Food

oil ½
tsp sea salt Heat oil in large skillet over medium heat. Add onion and sauté for 5 minutes or until onion begins to soften. Add smoked tofu, black-eyed peas, rice and collards. Cook for 5 minutes or until heated through. Season with sea salt and hot sauce. Serves 4-6. (Adapted from a recipe by Russell Simmons in PETA’s Animal Times.)
