Hip Hoppin John

  1 Tb olive oil
  1 medium chopped onion
  1 6-ounce package of smoked tofu
  2 16-ounce lead-free cans black eyed peas, rinsed and drained
  3 cups cooked brown rice
  1½ cups cooked, chopped collards

  ½ tsp sea salt
  Hot sauce, to taste

  Heat oil in large skillet over medium heat. Add onion and sauté for 5 minutes or until onion begins to   

  soften. Add smoked tofu, black-eyed peas, rice and collards. Cook for 5 minutes or until heated through.    

  Season with sea salt and hot sauce. Serves 4-6. (Adapted from a recipe by Russell Simmons in PETA’s
