Easy Pizza-y Tortilla Rollups

1 package of whole grain tortillas
Zesty chickpea spread
Sundried tomato spread
Veggie salami, sliced in thin strips
Nori or dulse flakes, to taste
1/8 tsp nutritional yeast
Sliced, pitted black kalamata olives (optional)
Roasted red pepper (store-bought, bottled in olive oil) cut in thin strips (optional)

Preheat oven to 300 degrees. Layer ingredients on tortilla in the following order: chickpea spread, sun-dried tomato spread, veggie salami strips, sprinkling of nori or dulse flakes, sprinkling of nutritional yeast, black olives (if desired), and red pepper strips (if desired). Heat until just warm; do not let tortilla become crispy or hardened. Roll into a burrito-shape and enjoy! The chickpea spread gives it a wonderful cheesy taste, the intense sun-dried tomato spread gives a robust tomato flavor, and the veggie salami and nutritional yeast add valuable Vitamin B-12 (so necessary for growing vegetarian teens).
