Couscous

3 cups whole wheat couscous
1 lead-free can of chick peas or garbanzo beans
4¾ cups water
1 vegetable bouillon cube
2 Tb olive oil
1 Tb tamari or raw soy sauce
1 cup raisins (optional)
1 package of frozen mixed vegetables (corn, green peas, carrots and string beans)

Place couscous in a large bowl and sprinkle with oil. Mix with hands or spoon to make sure that all grains are coated. Transfer the couscous to a serving dish. Place the water, bouillon cube and tamari or raw soy sauce in a large pot. Bring to a boil, reduce heat and simmer for 5 minutes. Pour stock over couscous. Immediately cover dish with a tight lid or plate so that no steam is released. Let stand for 15 minutes. Follow directions for heating frozen vegetables, then drain. When couscous is done, gently stir in mixed vegetables, chick peas and raisins. Fluff couscous with fork. Serves 4.
