Coleslaw

1 head of green cabbage
½ head of red cabbage
1 cup grated carrot
1 small finely chopped red onion
2 medium finely chopped scallions
2 large chopped tomatoes
1 small stalk chopped celery
1 medium chopped sweet red pepper
2 chopped avocados
4 tsp dried vegetable seasonings
3 Tb fresh lemon juice
¼ tsp paprika
4 Tb raw eggless mayonnaise

Grate the green and red cabbage and combine in a large bowl. Add the onions, chopped peppers and scallions. Add all of the seasonings and mix well until the juices of the vegetables have blended well with the seasonings. Gently stir in the eggless mayonnaise, tomatoes and avocados and mix well. Serves 4.
