Basmati Rice Salad

1 cup brown basmati rice
2½ cups water
½ vegetable bouillon cube
¼ cup minced red onion
½ cup diced bell pepper
½ cup coarsely chopped unsalted raw pistachios
½ cup chopped celery
¼ cup fresh lemon juice
¼ cup extra virgin olive oil
1½ Tb tamari or raw soy sauce
1 tsp dried oregano
12 leaves red lettuce for garnish

Place water and bouillon cube in pot and simmer until cube is dissolved. Place all other ingredients in pot and bring to boil. Turn down to simmer and cook for 45 minutes to 1 hour. Let rice cool. In large bowl, combine rice, onion, pepper, pistachios and celery. In small bowl, mix lemon juice, oil, tamari or raw soy sauce, and oregano. Pour the sauce onto the rice mixture and stir. To serve, make a bed of lettuce leaves and top with rice salad. Serves 4-6. (Adapted from The Natural Health Cookbook by Dana Jacobi.)
