   Baked Cutlets

   1 pound of firm or extra firm tofu

   ½ cup whole wheat flour

   ½ cup nutritional yeast
   2 tsp dried vegetable seasoning

   ¼ cup liquid aminos
   2-3 minced garlic cloves
   1 medium chopped onion
   1Tb olive oil for baking pan

   Press tofu between paper towels to squeeze out excess water. Slice tofu into thin rectangles about

    1-inch thick. Marinate cutlets in large bowl with liquid aminos, onions and garlic for 10-15 minutes, turning   

    cutlets a few times. Pour flour, nutritional yeast and seasoning in bag and shake. Dip each cutlet into bag

    and coat well. Place cutlets onto oiled cookie sheet and bake at 350 degrees for 15 minutes or until golden

    brown. (Optional: drain onions and garlic from marinade, heat until soft and serve with cutlets.) Serves 4.
