Dressings, Sauces and Spreads  

   Aji de Peru

Leaves of ½ bunch cilantro
1 clove garlic
1 celery stalk
Juice of ½ lime
½ tsp salt
1 tsp olive oil
¼ cup water
6 jalapeno peppers or 2 jalapenos and 3 habaneros (to make less spicy, remove seeds)

In blender, add cilantro, garlic, celery and peppers and blend at low speed until mixed. Add water and blend again. Add oil, lime and salt and blend again. Makes 1 cup. (Submitted by Ronald Arturo Castro.)
